Raspberry Cake for Christmas

For the mass:

2 cups of all-purpose flour.
1 cup of sugar.
1 cup unsalted butter (at room temperature).
4 eggs.
1 teaspoon vanilla extract.
1 teaspoon baking powder.
A pinch of salt.

For the Raspberry Filling:

3 cups of fresh raspberries.
1/2 cup of sugar.
2 tablespoons of lemon juice.

For Coverage:

1 cup of whipped cream.
Fresh raspberries to decorate.


1.Preheat the oven to 180°C. Grease and flour a cake pan.

  1. In a large bowl, beat the butter and sugar until smooth and creamy.
  2. Add the eggs one at a time, beating well after each addition. Add vanilla extract.
  3. In another bowl, mix the flour, baking powder and pinch of salt.
  4. Gradually add the dry ingredients to the wet mixture, beating until well combined.
  5. In a separate bowl, mix the raspberries with the sugar and lemon juice for the filling.
  6. Pour half of the batter into the cake pan.
  7. Add the raspberry mixture to the dough.
  8. Cover with the rest of the dough.
  9. Bake for 45-50 minutes or until a toothpick inserted in the center comes out clean.
  10. Let cool before unmolding.
  11. Whip the cream until soft peaks and decorate the cake with the whipped cream and fresh raspberries.
