-2 cups fresh raspberries (or IQF frozen)
-1/2 cup of sugar (adjust according to your preference)
-1 tablespoon of fresh lemon juice
-1 cup Greek yogurt or whipped cream (for creaminess)
-1 teaspoon vanilla extract (optional)
- Wash and dry the raspberries. If you are using them frozen, let them thaw before you start.
- In a blender or food processor, combine the raspberries, sugar and lemon juice. Mix until you obtain a smooth and homogeneous mixture.
- In a large bowl, mix raspberry mixture with Greek yogurt or whipped cream and vanilla extract (if desired).
- Pour the mixture into an ice cream maker and follow the manufacturer’s instructions for freezing. If you don’t have an ice cream maker, you can pour the mixture into an airtight container and freeze it, stirring every 30 minutes for about 2-3 hours to prevent ice crystals from forming.
- Once the ice cream is ready, serve it in cups or cones and garnish with some fresh raspberries for a special touch.
